Named No. 8 on <em>Northern Virginia Magazine<\/em>\u2019s <a href=\"https:\/\/northernvirginiamag.com\/food-and-drink\/reviews\/2025\/10\/24\/the-50-best-restaurants-in-northern-virginia-of-2025\/\" target=\"_blank\" rel=\"noreferrer noopener\">50 Best Restaurants of 2025<\/a> list, the Italian standout has quickly become one of the region\u2019s toughest reservations. It even attracted a high-profile visit last month from former President Joe Biden.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-new-larger-location\">New, Larger Location<\/h3>\n\n\n\n<p>Now, the restaurant is capitalizing on that momentum with plans to open a second, significantly larger location in Gainesville. It will take over the former Bar Louie space at 14081 Promenade Commons St.<\/p>\n\n\n\n<p>\u201cIt\u2019s going to be twice the size of the <a href=\"https:\/\/northernvirginiamag.com\/food-and-drink\/food-news\/2024\/03\/18\/carbonara-the-newest-restaurant-from-mike-cordero-opens-in-ballston\/\" target=\"_blank\" rel=\"noreferrer noopener\">restaurant in Arlington,<\/a>\u201d says executive chef Mike Cordero, noting the new outpost will seat approximately 250 guests. \u201cWe chose Gainesville because there really isn\u2019t an Italian restaurant out there doing what Carbonara does, and we felt it would be a great fit.\u201d<\/p>\n\n\n\n<p>Construction is slated to begin in mid-January, with an anticipated opening in June. The new location will carry forward Carbonara\u2019s classic Italian cooking, rooted in Cordero\u2019s New York City family heritage. The menu will center on housemade pasta and celebrate old-school Italian cuisine built on simple, high-quality ingredients and robust flavors.<\/p>\n\n\n\n<p>\u201cWe make everything from scratch \u2014 the pasta, the bread, the mozzarella, even the desserts,\u201d Cordero says. \u201cPeople really appreciate that in Arlington. We get a lot of guests from New York and New Jersey who say, \u2018Oh my God, finally \u2014 a restaurant that feels like New York or Jersey.\u2019\u201d<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"800\" src=\"https:\/\/northernvirginiamag.com\/wp-content\/uploads\/2025\/10\/Carbonara_Michael-Butcher.webp\" alt=\"Carbonara\" class=\"wp-image-527379\"\/><figcaption class=\"wp-element-caption\"><em>Chef Mike Cordero (Photo by Michael Butcher)<\/em><\/figcaption><\/figure><\/div>\n\n\n<h3 class=\"wp-block-heading\" id=\"h-food-and-ambience\">Food and Ambience<\/h3>\n\n\n\n<p>Signature dishes such as clams oreganato, chicken cutlet Parmigiana, gnocchi della mamma, and shrimp scampi will continue to anchor the menu, complemented by a thoughtfully curated wine list. The Gainesville location will also echo the warm, nostalgic atmosphere of the Arlington original, blending rustic Italian charm with modern polish.<\/p>\n\n\n\n<p>\u201cWe want it to look fancy, but we want the customers to still have a bang for their buck,\u201d Cordero says. \u201cAnd [have] budget-pleasing prices, [so people don&#8217;t] feel like they&#8217;re going to a restaurant in DC where they&#8217;re charging $40 for a plate of pasta; they&#8217;re going to have the same ambience of something that caliber.\u201d<\/p>\n\n\n\n<p>A 47-year veteran of the culinary world, Cordero is widely regarded as a trailblazer in the DMV dining scene. His work at Carbonara has <a href=\"https:\/\/northernvirginiamag.com\/food-and-drink\/2024\/12\/05\/arlingtons-carbonara-named-one-of-yelps-best-new-restaurants-of-2024\/\" target=\"_blank\" rel=\"noreferrer noopener\">earned national recognition<\/a>, and now he hopes to replicate that success in Gainesville.<\/p>\n\n\n\n<p>\u201cHospitality is our name \u2014 it\u2019s all about the experience here,\u201d he says. \u201cWe have the Parmesan wheel being flamed, we have desserts that we do tableside, like a tableside tiramisu. We have the ambience; we have Frank Sinatra singers that come every weekend.
